Waltham Forest College
KCCJ was delighted to be involved in the supply and installation of new catering facilities at Waltham Forest College after the College was granted funding by the Greater London Authority.
KCCJ supplied and installed a wide range of equipment for the refurbished training kitchen, including ten purpose built stainless steel workstations, each with its own bench mounted dough mixer and retractable, ceiling mounted 13amp power supply for connecting other handheld food preparation equipment. At one end of the kitchen is a much larger station from which the lecturer is able to view the students and conduct training sessions with the assistance of an interactive whiteboard positioned on the wall behind.
To the sides and rear of the kitchen is a selection of state-of-the-art equipment for storage, preparation and cooking. With baking skills being a primary focus of the kitchen this is reflected in much of the equipment that KCCJ supplied. For example, one side of the facility features a heavy duty dough mixer, pastry roller and prover, alongside refrigeration and storage units. On the opposite wall there is a selection of cooking equipment including bain maries, sous vide water baths, two six burner gas ranges – one of which is an existing unit that KCCJ repositioned, and a 4 burner gas boiling top, again an existing unit that KCCJ was able to re-use. Positioned on the rear wall, and below a purpose built canopy, is the heavy duty cooking equipment including a triple deck baking oven, two ten grid combi ovens and two double tank gas fryers. The layout also includes specialist equipment such as adjustable height workbenches to give full access for students in wheelchairs.
Completing the installation, and positioned between the workstations and the rear wall, is a central workbench with a range of other ancillary equipment including an anti-griddle, dough mixer, breadmaker and food processor.
Opening in time for the start of the new academic year in September 2018, Waltham Forest College has strong links with famous restaurants and hotels including the Waterside Inn, Delaware North, Claridges and the Ritz. Students in Hospitality and Catering enjoy a full range of daytime and evening courses and there is also a wide choice of apprenticeships so they can learn while they earn. The College trains chefs, front of house restaurant staff, butchers, bakers and baristas.
