
KCCJ were invited by the NIC - National Ice Centre and Compass Group to provide a feasibility study to show potential revenue and profitability increase through food and drink. The outcome lead to a full refurbishment scheme which has the numbers adding up already....
Design. Following on from the success at the O2 Arena Compass wanted to review the catering strategy of Trent FM Arena and produce a detailed feasibility study showing potential areas to increase revenue and profitability through the food and drink offer and redesign of the concourse outlets. Initially the project was to be a basic refurbishment, but by acting as cost consultantss we highlighted and proved through studies opportunities to optimise sales measured against expenditure. Presentations to Compass and the NIC lead to the award of the full scheme for fit out of all eight outlets, extract and supply air improvement, and future planning for an 80 seater restaurant. KCCJ acted as consultants to design and develop the specification for the beverage system and lead negotiations on the fit out of the system by the elected brewer.
Project Management. A team of two project managers on site, and office based cad operator oversaw the design and development stage, through to installation and project handover. The team co-ordinated with the contractors on site and worked successfully with Trent FM's own project manager to complete the project with minimal disruption as the facility remained fully operational throughout the program of works.
Food Offer. The outlets located on the main concourse were designed to serve the customer in the shortest time possible with an increased variety of products including pizza, burgers, hot dogs and baguettes. We worked with the client on elements of the operation that were considered to be hindering and slowing the service time down. Firstly we suggested signage and marshalling on the concourse to help ease the flow of visitors movements to an available outlet. Secondly the menu boards were removed from the high level display point on the outside wall above the concession which caused customers to stand idle directly in front of the counter blocking buying customers while making food choices. We worked with the Client on new clearly illuminated signage fitted above the service counter at eye level which reduced crowd build up and congestion. With the removal of beer cellars at the rear of the concessions space was made available for increased levels of cooking and pre packaging area which sped up serving time and efficiency.
Drinks Dispense System. We specially designed and developed a fast flow drinks distribution system for beer, spirits and soft drinks. Developed to maximise sales pre event, during intervals and at the end of an event. We held co-ordinated meetings with Trent FM's elected brewer to provide guidance on the system installation, maintenance and performance abilities. The arena had (8) eight existing beer cellars to the rear of each concession which we removed to increase cooking space. We designed the refrigeration system with two central beer cellars which consolidated deliveries and reduced the need for product movement around the arena and staff time.
The Trent FM Arena project provided an exciting opportunity for KCCJ to demonstrate the opportunities available to facilities such as this to maximise revenue and profitability through careful and considered initial expenditure against a measured period of return. The reward from this project has already been recognised by the client through increased sales which has allowed them to continue on with other works that were planned for the future.
